Today’s dish is stuffed red peppers 🌶
Super easy, super quick and super delicious .
First preheat the oven to 375F
Grease a baking sheet and arrange the bell peppers standing up, cook for 15 -20 minutes or until tender.
In the meantime in a large pan cook spicy Italian sausage for 5-6 minutes. When ready set aside.
On the same pan, add rice, water and fire roasted diced tomatoes and cook for around 20 minutes, stirring occasionally.
Stir the sausage and Mexican blend cheese into the pan. Spoon mixture into the baked peppers and top with more cheese. Transfer to the oven and bake until cheese is melted.
Served top with parsley and scallion and Enjoy 😊
