Seared Chicken & Farro with Honeynut Squash and Apple-Almond Relish. 🍏
Preheat the oven to 450F
Quarter squash, drizzle with olive oil and season with salt and pepper. Roast 25-30 minutes, or until lightly browned and tender.
Cook the farro until tender.
To make it apple relish , in a large pan heat the butter, add the sage, almonds and apple, season with salt and pepper. Cook for 3-5 min and set aside.
Season chicken with salt and pepper on both side. Heat the olive oil add the chicken and cook 5-7 minutes per side, or until lightly browned and cooked through.
Leaving any browned bits in the pan, transfer to a plate. Add the farro, spinach and cranberry, cook for 2-3 min. Stir in the mashed squash.
Served the chicken top with the apple relish. Enjoy!😊
