Rack of Lamb.
Tender, super delicious idea for dinner.
First preheat the oven to 400F.
To prepare the basil crust combine together Parmesan cheese, bread crumbs, basil and parsley in the food processor.
Season the lamb racks with salt and pepper. Stirred for 5 minutes to each side, add the thyme, garlic and butter to the pan and baste for another minute. Transfer to the oven and roast additional 4-5 minutes. Next transfer the lamb to a sheet tray and brush with Dijon mustard. Let the mustard absorb for a minute or two. Next dip the lamb into the Basil crust and place back to the oven for additional 4-5 minutes.
When ready rest the meat for 5-10 minutes.
I served with grilled potatoes.
