Mussels with Parmesan Fries.
I really like mussels and I could eat them every day. This time I decided to do with home made fries 🍟
I made fries from russet potatoes, drizzle with the olive oil, fresh basil, salt and pepper and bake for 35-40 minutes at 425F
To make the mussels in large pot, melt the butter and olive oil, add the shallots and cook for about 5 minutes. Add the garlic, stir in the harissa, smoked paprika, salt and black pepper. Next pour in the coconut milk. When it boils, add the mussels and cherry tomatoes. Cover and cook for about 5 minutes or until the mussels have all opened.
Ready fries toss with Parmesan cheese and fresh basil 🌿 mussels garnish with basil and if you like coriander and Bon appetite! 😋
