Large Shrimp 🍤 with Armagnac.

Preheat the oven to 400F
In large sauté pan , heat the olive oil over high heat until nearly smoking. Add the shrimp, season with salt and pepper, and cook for 5 minutes. Transfer to a baking dish. To the same pan add the butter, when melted add shallots and cook for about 4 minutes or until translucent and slightly tender. Sprinkle with thyme, add the white wine, and simmer to reduce. Pure over the shrimp.
Bake until lightly golden, about 10 minutes.
Heat the Armagnac in a sauce pan.
Remove the shrimp from the oven and pour the warm Armagnac over them.
Serve immediately and Enjoy ☀️
