French hunter’s chicken.
Delicious, crispy, tasty and flavorful.
Preheat the oven to 400F.
Coat the chicken with salt, pepper and flour. In a large Dutch oven heat butter, add the chicken and brown on all sides. Transfer the pan to the oven and roast for 20-25 minutes.
When ready remove the chicken to the plate and on to the same pan add the onion, shallots, and garlic. Season with salt and pepper and cook for 4 minutes. Throw in rosemary, sage, parsley thyme, bay leaf and mushrooms and continue to cook for 3 minutes. Pure in the chicken stock and boil for 5 minutes.
Add butter and return the chicken to the pan. Reheat, spooning the sauce over the chicken. Scatter the tarragon all over and Enjoy!
