Cashew Chicken, just like take-out, only better.
Cashew chicken with tender stir fried chicken and roasted cashews in garlic sauce.
First roast the cashew for 5 -8 minutes in 350F When ready set aside.
Meanwhile, prepare the sauce, whisk together the water, cornstarch, hoisin sauce and soy sauce.
In a large skillet, heat the olive oil, add the chicken, sprinkle with salt and pepper and stir fry for about 3-5 minutes. Add the garlic and white part of the scallions. Stir fry for additional 3 minutes. Add the sauce to the chicken, cook, tossing, until the chicken is cooked through and the sauce is thickened. Stir the scallion greens, cashews and served with steamed rice.
